CHIACCHIERE OR LATTUGHE BY MASSARI

Ingredienti

500g all-purpose flour

60g sugar

30g grappa

10g salt

4 eggs

grated zest of one lemon

To finish:

1 vanilla pod

icing sugar – as much as necessary

Chiacchiere – or Lattughe – are sweet proposals among East Lombardy’s signature recipes for a good day by Iginio Massari, Pasticceria Veneto.

 

Method:

Knead everything together in order to obtain a very smooth and elastic dough. Stretch the dough until you get a thin, almost transparent layer. Cut the dough into diamonds or rectangles making a cut in the middle.

Cook the lattughe at 176°C in seed oil for a few seconds on both sides. Drain and sprinkle with vanilla flavoured icing sugar.
