BUCKWHEAT FLOUR CAKE WITH POLISENA PLUM JAM

Ingredienti

Ingredients for two 24cm diameter cakes.

For the cake:

  • 250g buckwheat flour
  • 250g cane sugar
  • 150g stone ground wholemeal flour
  • 250g Valtorta butter
  • 8 eggs from Polisena
  • yeast

For the filling:

  • bathe with citrus syrup
  • Polisena plum jam

The buckwheat flour cake with plum jam is East Lombardy’s signature recipe for a good day by Agriturismo Polisena.

Method:

Beat the butter with the sugar, add the eggs, then the flours and the yeast. Bake at 180°C for 30 minutes.

Allow to cool. Cut in half and spread the inside with the citrus syrup and then spread it with plum jam.

Serve with a sprinkling of icing sugar and with zabaione scented with Riesling from the organic wine company Tosca, whose grapes are grown in the area surrounding Agriturismo Polisena.
