Donizetti Cake – La Marianna

Ingredienti

Ingredients for a 24cm diameter cake

  • 260 g butter
  • 150 g sugar
  • 100 g starch
  • 120 g candied pineapple, chopped into small pieces
  • 80 g flour
  • 80 g candied apricot, chopped into small pieces
  • 8 egg yolks
  • 4 egg whites
  • 1 vanilla bean
  • maraschino liqueur, as needed

The Donizetti Cake is East Lombardy’s signature recipe for a good day by La Marianna.

Method

Beat the sugar together with the butter; then add one yolk at a time. Beak the egg whites together with the remaining sugar until stiff peaks form and gently combine them with the other mixture.

Gradually add the sifted flour and starch, maraschino liqueur, vanilla bean seeds and candied apricot and pineapple.

Place the mixture in a greased and floured ring shaped cake tin (24/26 cm) and bake at 180°C for about 40 minutes.

Once the cake has cooled, sprinkle with icing sugar.


Curiousity

The Donizetti Cake was created in 1948 in honour the centennial anniversary of the death of Gaetano Donizetti (1797-1848), famous Bergamasco musician.
